What is an "IH" or Induction Heating Rice Cooker?

An induction cooker uses a different method for heating the rice pan which results in more even heat distribution.

Instead of a heating element that makes contact with the bottom of the bowl there are coils that surround the bottom of the cooking bowl without making contact.

An electro-magnetic current passes through these coils which heats from all sides resulting in more evenly-cooked rice as opposed to a heating element which heats from the bottom up. This also helps reduce the heat the unit absorbs making it more "touch friendly" on the outside.

In combination with using fuzzy logic monitoring technology, and in some cases pressure cooking, most IH rice cookers will produce excellent quality rice...especially the challenging brown rice variety.

What are Good Induction Rice Cooker Choices?

Some of the best IH cookers are put out by a company called, Zojirushi.

Folks will specifically want to research Zojirushi's NP-Series models since these are the rice cookes that come equipped with induction heating coils.

For the highest quality in brown rice cooking, or for folks who mainly eat brown rice but also want the highest quality white rice, mixed, and sushi, we recommend the Zojirushi NP-HTC10 or 18 (5.5 or 10 cup capacity).

Both are IH pressure rice cooker units and also use a method called "GABA" when preparing brown rice that soaks the rice longer resulting in a fluffier and easier to digest batch with the highest nutrient count.

In addition, the NP-HTC series will use Zojirushi's fuzzy logic monitoring system that will pay attention to how the rice is cooking making subtle adjustments where needed.

They are expensive and may not fit everyone's budget, but are worth it for folks who demand the best rice quality.
